Abstract

During the course of an investigation of the natural pigments of milk carried on in the Research Laboratories of the Dairy Department, at the University of Missouri, it became evident that more than one pigment existed in the milk; namely that the pigment which remained in the whey after the removal of casein and fat was not identical with the pigment found in the fat. The investigation reported here deals only with the whey pigment. The object of this investigation was to repeat the investigations upon the chemical nature of this pigment to add any possible points; to coordinate the varying results which have been obtained and to determine the factors which influence the varying amount of the pigment and if possible assign a reason for its presence in the serum.
