Abstract
Tannase Tannin acyl hydrolase catalyses the hydrolysis of gallic newlineacid esters and hydrolysable tannins to gallic acid It is an extracellular newlineinducible enzyme produced in the presence of tannic acid by fungi bacteria newlineand yeast Species of Aspergilli are reported as the best tannase producers in newlinesubmerged and solid state fermentation Tannase has multivarious newlineapplications in different industries Although tannase has got a wide range of newlineapplications the use of this enzyme is at present limited due to its high cost newlineand lack of abundant availability newline newline newline%%%Reference p.108-118
